Yes, in 34 of the 41 countries in this table, wherever the local network offers 5G and your phone supports it. Everywhere else it uses 4G.
The eSIM connects to the strongest network on its own. If you prefer another network from the list, you can usually pick it by hand under network selection in your phone's settings.
Yes. Hotspot is allowed on every plan at no extra charge, so a laptop or a tablet can use the same data.
